Ingredients
- beef stew meat – 1 lb / 450 g
- carrots – 2 large, sliced
- yams – 2 medium, peeled and cubed
- turnip – 1 large, peeled and cubed
- celery stalks – 2, chopped
- green bell pepper – 1, chopped
- onion – 1 large, chopped
- garlic – 4 cloves, minced
- bouillon cubes – 2
- fresh thyme – 3 sprigs
- parsley – 1/4 cup / 15 g, chopped
- scotch bonnet pepper – 1, whole
- water – 8 cups / 2 liters
- salt – to taste
- black pepper – to taste
Instructions
- In a large pot, add beef stew meat and cover with water. Bring to a boil, then reduce to simmer for 30 minutes.
- Add carrots, yams, turnip, celery, bell pepper, onion, and garlic to the pot. Stir to combine.
- Dissolve bouillon cubes in hot water and add to the pot along with thyme, parsley, and the whole scotch bonnet pepper.
- Simmer for another 45 minutes until the meat is tender and vegetables are cooked through.
- Remove the scotch bonnet pepper from the soup before serving.
- Season with salt and black pepper to taste.
