Ingredients

  • beef eye round roast – 2 lbs / 900 g
  • chorizo sausage – 4 oz / 115 g, sliced
  • garlic cloves – 4 cloves, minced
  • onion – 1 large, chopped
  • green bell pepper – 1 large, chopped
  • tomato sauce – 16 oz / 450 ml
  • dry white wine – 1 cup / 240 ml
  • beef broth – 1 cup / 240 ml
  • bay leaves – 2 leaves
  • ground cumin – 1 tsp / 5 g
  • olive oil – 2 tbsp / 30 ml
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Make small incisions in the beef roast and stuff them with slices of chorizo.
  3. Season the roast with salt and ground pepper to taste.
  4. In a large oven-safe pot, heat olive oil over medium heat and sear the roast on all sides until browned. Remove the roast and set aside.
  5. In the same pot, add onion and green bell pepper; sauté until soft.
  6. Add minced garlic and sauté for an additional minute.
  7. Pour in the tomato sauce, dry white wine, and beef broth. Stir in the bay leaves and ground cumin.
  8. Return the roast to the pot, cover, and braise in the oven for about 2 hours until the meat is tender.
  9. Remove the bay leaves and adjust seasoning with salt and pepper.
  10. Slice the roast and serve with the rich tomato sauce.
