- Chili peppers – 2, finely sliced
- Green onions – 4 stalks, finely chopped
- Fresh cilantro – 1/2 cup, roughly chopped
- Fresh mint leaves – 1/4 cup, roughly chopped
Instructions
- Rinse the goat meat thoroughly under cool water.
- In a large pot, bring water to a boil and add 1 teaspoon of salt and goat meat.
- Simmer the goat meat for about 1-1.5 hours or until tender.
- Remove the goat meat, let it cool slightly, then slice thinly against the grain.
- Place the sliced meat in a bowl and evenly drizzle with lemon juice.
- Add fish sauce, remaining salt, ginger, garlic, and chilies to the meat, tossing well to coat.
- Garnish with green onions, cilantro, and mint leaves.
