Ingredients
- dried white beans – 2 cups / 400 g
- olive oil – 2 tablespoons / 30 ml
- onion, finely chopped – 1 large / 200 g
- carrots, diced – 2 medium / 150 g
- celery stalks, diced – 2 stalks / 100 g
- red bell pepper, diced – 1 medium / 150 g
- garlic cloves, minced – 4 cloves / 12 g
- tomato paste – 2 tablespoons / 30 g
- paprika – 1 tablespoon / 8 g
- bay leaves – 2 leaves
- vegetable broth – 8 cups / 2 liters
- salt – to taste
- black pepper – to taste
- fresh parsley, chopped – 1/4 cup / 15 g
Instructions
- Rinse the beans under cold water and soak them overnight in at least double their volume of water.
- Drain and rinse the beans, then place them in a large pot with fresh water. Bring to a boil, then simmer for 45 minutes or until the beans are tender.
- In a separate large pot, heat the olive oil over medium heat. Add the onion, carrots, celery, and bell pepper. Sauté until the vegetables are soft, about 10 minutes.
- Stir in the garlic and tomato paste. Cook for another 2 minutes, then add the paprika and bay leaves.
- Pour in the vegetable broth and add the cooked beans. Season with salt and pepper, then bring to a boil.
- Reduce heat and let it simmer for another 30 minutes to meld the flavors together.
- Adjust the seasoning if necessary and sprinkle with chopped fresh parsley before serving.
