Ingredients
- Fermented black beans – 3 tbsp / 45 g

- Shaoxing wine – 2 tbsp / 30 ml
- Brown sugar – 1 tbsp / 15 g
- Water – 1/2 cup / 120 ml
- Cornstarch – 1 tsp / 5 g
- Sesame oil – 1 tsp / 5 ml
- Vegetable oil – 1 tbsp / 15 ml
Instructions
- Rinse the fermented black beans under running water to remove excess salt.
- In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry and set aside.
- Heat the vegetable oil in a saucepan over medium heat.
- Add the minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.
- Stir in the black beans and cook for another minute.
- Pour in the soy sauce, Shaoxing wine, brown sugar, and the remaining water.
- Bring the mixture to a boil, then reduce the heat and simmer for 5 minutes.
- Add the cornstarch slurry and stir until the sauce thickens.
- Drizzle the sesame oil over the sauce for added aroma.
- Remove from heat and use immediately or store in an airtight container for up to a week.
