Ingredients

  • Fermented black beans – 3 tbsp / 45 g
  • Garlic – 3 cloves, minced
  • Ginger – 1 tbsp, grated
  • Soy sauce – 2 tbsp / 30 ml
  • Shaoxing wine – 2 tbsp / 30 ml
  • Brown sugar – 1 tbsp / 15 g
  • Water – 1/2 cup / 120 ml
  • Cornstarch – 1 tsp / 5 g
  • Sesame oil – 1 tsp / 5 ml
  • Vegetable oil – 1 tbsp / 15 ml

Instructions

  1. Rinse the fermented black beans under running water to remove excess salt.
  2. In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry and set aside.
  3. Heat the vegetable oil in a saucepan over medium heat.
  4. Add the minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.
  5. Stir in the black beans and cook for another minute.
  6. Pour in the soy sauce, Shaoxing wine, brown sugar, and the remaining water.
  7. Bring the mixture to a boil, then reduce the heat and simmer for 5 minutes.
  8. Add the cornstarch slurry and stir until the sauce thickens.
  9. Drizzle the sesame oil over the sauce for added aroma.
  10. Remove from heat and use immediately or store in an airtight container for up to a week.
