Ingredients

  • beef sirloin – 1 lb / 450 g
  • onion, thinly sliced – 1 large / 200 g
  • bell pepper, thinly sliced – 1 large / 150 g
  • tomato, diced – 2 medium / 240 g
  • garlic, minced – 3 cloves
  • olive oil – 2 tbsp
  • soy sauce – 2 tbsp
  • vinegar – 1 tbsp
  • ground cumin – 1 tsp
  • salt and pepper – to taste
  • cilantro, chopped – 2 tbsp

Instructions

  1. Slice the beef sirloin into thin strips.
  2. In a bowl, combine beef, soy sauce, vinegar, garlic, cumin, salt, and pepper. Marinate for 15 minutes.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Add the marinated beef strips and brown them for about 5 minutes.
  5. Add sliced onions and bell peppers to the skillet. Cook until they are soft and the onions are translucent, about 10 minutes.
  6. Stir in the diced tomatoes and cook for another 5 minutes.
  7. Adjust seasoning with more salt and pepper if needed.
  8. Garnish with chopped cilantro before serving.
