Ingredients
- sirloin steak – 2 lbs / 900 g
- white onion – 2 large / 500 g
- garlic cloves – 4 cloves minced
- white vinegar – 1/4 cup / 60 ml
- olive oil – 3 tbsp / 45 ml
- oregano – 1 tsp / 5 g
- ground cumin – 1 tsp / 5 g
- bay leaves – 2 leaves
- salt – 1 tsp / 5 g
- black pepper – 1/2 tsp / 2.5 g
Instructions
- Thinly slice the sirloin steak and place it in a large bowl.
- Add minced garlic, white vinegar, olive oil, oregano, cumin, bay leaves, salt, and pepper to the steak. Mix well to coat all pieces, cover, and marinate in the refrigerator for at least 2 hours or overnight for best flavor.
- Slice onions into rings. Heat a large skillet over medium heat and add a tablespoon of olive oil.
- Remove steak from marinade and cook in batches until browned and cooked through, about 3-5 minutes each side.
- Remove steak and add onions to the same skillet. Cook until caramelized, about 5-7 minutes.
- Serve steaks topped with caramelized onions, alongside rice and beans or tostones.
