- beef bones – 2 lbs / 900 g

- cinnamon stick – 1 whole
- cloves – 4 whole
- fish sauce – 1/4 cup / 60 ml
- rock sugar – 1 piece / 30 g
- rice noodles – 1 lb / 450 g
- beef sirloin, thinly sliced – 1 lb / 450 g
- green onions, sliced – 2 stalks
- bean sprouts – 2 cups / 150 g
- fresh cilantro leaves – 1/2 cup / 20 g
- Thai basil leaves – 1/2 cup / 20 g
- lime, cut into wedges – 2
- jalapeño, sliced – 1
Instructions
- Toast the onion and ginger on a grill or open flame until charred. This adds a smoky depth to the broth.
- In a large pot, bring beef bones to a boil, reduce the heat, and simmer. Skim off any foam that surfaces.
- Add charred onion, ginger, star anise, cinnamon stick, and cloves to the pot. Simmer for at least 3 hours.
- Strain the broth, discarding solids. Return the broth to the pot, season with fish sauce and rock sugar to taste.
- Cook the rice noodles according to package instructions. Drain and set aside.
- To serve, divide noodles among bowls, top with sliced beef sirloin, and ladle hot broth over the top to cook the beef.
- Garnish with green onions, bean sprouts, cilantro, and basil. Serve with lime wedges and jalapeño slices.
