Beef kway teow – Classic

Beef Kway Teow is a beloved Singaporean noodle dish that captivates with its strong wok hei (breath of the wok) flavor and tender marinated beef strips nestled with flat rice noodles, known as kway teow. Originating from the food hawker culture, this dish melds a rich combination of soy sauce and aromatic ingredients for a hearty, comforting meal.

Ingredients

  • Flat rice noodles (kway teow) – 400 g / 14 oz
  • Beef sirloin, thinly sliced – 300 g / 10.5 oz
  • Dark soy sauce – 3 tbsp / 45 ml
  • Light soy sauce – 2 tbsp / 30 ml
  • Oyster sauce – 2 tbsp / 30 ml
  • Bean sprouts – 200 g / 7 oz
  • Eggs – 2, beaten
  • Garlic, minced – 3 cloves
  • Scallions, chopped – 3 stalks
  • Vegetable oil – 2 tbsp / 30 ml
  • White pepper – 1 tsp

Instructions

  1. Soak the rice noodles in warm water for 15 minutes until soft. Drain and set aside.
  2. Marinate the sliced beef with 1 tablespoon of dark soy sauce and 1 teaspoon of white pepper. Let it rest for 20 minutes.
  3. Heat 1 tablespoon of vegetable oil in a wok over high heat. Fry the garlic until fragrant.
  4. Add the marinated beef to the wok and stir-fry until almost cooked through. Remove and set aside.
  5. Add the remaining oil to the wok, pour in the beaten eggs, and lightly scramble.
  6. Toss in the rice noodles, dark soy sauce, light soy sauce, and oyster sauce, stir-frying to coat evenly.
  7. Return the beef to the wok along with the bean sprouts, mixing everything thoroughly.
  8. Garnish with scallions before serving hot.
