Bebek betutu – Classic

Bebek Betutu is a traditional Balinese dish characterized by its rich, spicy flavors and succulent, tender duck. This Indonesian delicacy is wrapped in banana leaves and slow-cooked to tender perfection, allowing the aromatic spices to deeply penetrate the meat. Originating from Bali, Bebek Betutu is traditionally served during temple festivals or special occasions, celebrated for its complex flavor profile and the care taken in its preparation.

Ingredients

  • Whole duck – 1.5 kg / 3.3 lbs
  • Shallots – 8 pieces
  • Garlic – 6 cloves
  • Galangal – 5 cm piece
  • Ginger – 5 cm piece
  • Turmeric – 5 cm piece
  • Candlenuts – 5 pieces
  • Bird’s eye chili – 5 pieces
  • Fresh kaffir lime leaves – 5 leaves
  • Lemongrass – 2 stalks
  • Coriander seeds – 2 tbsp
  • Black peppercorns – 1 tsp
  • Salt – 2 tsp
  • Palm sugar – 2 tbsp
  • Banana leaves – enough to wrap the duck
  • Water – 1 cup / 240 ml

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Clean and pat the duck dry, removing any excess fat.
  3. In a food processor, blend shallots, garlic, galangal, ginger, turmeric, candlenuts, bird’s eye chili, kaffir lime leaves, lemongrass, coriander seeds, and peppercorns into a fine paste.
  4. In a saucepan, cook the spice paste over medium heat with the salt and palm sugar until fragrant and oil separates from the paste, about 5-7 minutes.
  5. Rub the spice mixture all over and inside the duck thoroughly.
  6. Wrap the seasoned duck in banana leaves, ensuring it’s well-covered. Secure with kitchen twine if necessary.
  7. Place the wrapped duck in a baking dish, add water to the bottom, cover with a lid or aluminum foil, and bake for about 2 1/2 – 3 hours.
  8. Once cooked, let it rest for 10 minutes before unwrapping the banana leaves. Serve the duck with steamed rice.
