Ingredients
- sweet corn kernels – 2 cups / 340 g
- mung beans – 1 cup / 200 g
- pumpkin, diced – 2 cups / 300 g
- coconut milk – 1 can / 400 ml
- water – 3 cups / 720 ml
- onion, chopped – 1 medium / 150 g
- garlic, minced – 3 cloves
- vegetable oil – 2 tbsp / 30 ml
- salt – 1 tsp / 5 g
- black pepper – 1/2 tsp / 2 g
Instructions
- Rinse mung beans thoroughly and soak in water for at least 30 minutes.
- In a large pot, heat the vegetable oil over medium heat. Add chopped onion and minced garlic, sautéing until fragrant and translucent.
- Drain mung beans and add them to the pot with 3 cups of water. Bring to a boil, then reduce heat and simmer for about 20 minutes.
- Add the diced pumpkin, sweet corn kernels, and coconut milk to the pot. Stir well to combine.
- Season with salt and black pepper. Continue to simmer until the pumpkin is tender and the stew has thickened, about 15-20 minutes.
- Adjust seasoning if necessary and serve hot.
