Banska Kapama is a hearty Bulgarian casserole originating from the Bansko region, a picturesque area nestled in the Pirin Mountains. This traditional dish is a celebration of rich, savory flavors, featuring a variety of meats and an array of spices, slow-cooked to perfection. It’s typically served during festive occasions and family gatherings, embodying the warmth and hospitality of Bulgarian culture.

Ingredients

  • pork shoulder – 1 lb / 450 g
  • beef chuck – 1 lb / 450 g
  • smoked sausage – 8 oz / 225 g
  • sauerkraut – 2 cups / 300 g
  • uncooked rice – 1 cup / 200 g
  • onion – 1 large, chopped
  • garlic cloves – 4, minced
  • paprika – 1 tbsp
  • cumin – 1 tsp
  • bay leaf – 1
  • black pepper – 1 tsp
  • vegetable broth – 2 cups / 480 ml
  • olive oil – 2 tbsp
  • salt – to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large casserole dish, layer the sauerkraut and rice evenly at the bottom.
  3. Heat olive oil in a skillet and brown the pork shoulder and beef chuck. Slice the sausage into chunks.
  4. Add browned meats and sausage on top of the rice and sauerkraut.
  5. In the same skillet, sauté the onions and garlic until translucent, then add paprika, cumin, bay leaf, black pepper, and salt.
  6. Pour the sautéed mixture over the meat.
  7. Add vegetable broth, cover the casserole dish with a lid or aluminum foil.
  8. Bake in the preheated oven for 2.5 to 3 hours, or until meats are tender and flavorful.
