Ingredients
- Mung beans – 200 g / 1 cup dried
- Sugar – 150 g / 3/4 cup
- Coconut oil – 75 g / 5 tbsp
- All-purpose flour – 300 g / 2 1/2 cups
- Cornstarch – 50 g / 1/3 cup
- Butter – 100 g / 7 tbsp
- Cold water – 120 ml / 1/2 cup
- Salt – 1/2 tsp
Instructions
- Soak the mung beans in water overnight, then rinse and steam them until soft.
- Mash the steamed mung beans and mix with sugar and half the coconut oil. Cook over low heat until the mixture thickens. Set aside to cool.
- In a separate bowl, mix all-purpose flour, cornstarch, butter, and salt. Gradually add cold water until a dough forms.
- Divide the dough into 12 equal portions. Flatten each portion and place a tablespoon of mung bean filling in the center.
- Fold and seal the dough around the filling, shaping each into a flat disc.
- Preheat oven to 180°C (350°F). Place the bakpia on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until the pastry is golden brown. Allow to cool before serving.
