Ingredients

  • large eggplants – 2 medium / 600 g
  • garlic cloves – 4 cloves / 12 g
  • medium onion – 1 / 150 g
  • hot pepper – 1 small / 10 g
  • fresh cilantro – 1/4 cup / 15 g, chopped
  • vegetable oil – 2 tbsp / 30 ml
  • salt – 1 tsp / 5 g

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the eggplants directly on the oven rack and roast for 30-40 minutes, until the skin is charred and the flesh is soft.
  3. Remove the eggplants, let them cool, then peel off the skin and mash the flesh in a bowl.
  4. While the eggplant is roasting, finely chop the garlic, onion, and hot pepper.
  5. Heat the oil in a pan over medium heat, add the onion, garlic, and hot pepper, and sauté until softened and fragrant, about 5 minutes.
  6. Mix the sautéed onions, garlic, and pepper with the mashed eggplant. Stir in the chopped cilantro and salt to taste.
  7. Serve warm with roti or rice.
