Azevia is a traditional Portuguese pastry that graces the tables of homes especially during the festive season of Christmas. Originating from the southern region of Portugal, these delightful fried pastries are filled with a sweet mixture that usually includes chickpeas, almonds, or sweet potatoes, showcasing the country’s love for combining simple ingredients to create profound flavors. The crisp outer layer, often dusted with sugar and cinnamon, provides a perfect contrast to the soft, rich filling inside.

Ingredients

  • All-purpose flour – 2 1/4 cups / 280 g
  • Sugar – 1 cup / 200 g, plus extra for dusting
  • Chickpeas – 1 cup / 200 g, cooked and mashed
  • Ground almonds – 1/2 cup / 65 g
  • Butter – 1/3 cup / 75 g, melted
  • Eggs – 2, beaten
  • Cinnamon – 2 teaspoons, ground
  • Water – 1/4 cup / 60 ml
  • Vegetable oil – 2 cups / 480 ml, for frying
  • Salt – 1 pinch

Instructions

  1. In a large bowl, combine the flour with a pinch of salt and the melted butter. Mix until the mixture resembles coarse crumbs.
  2. Add the water gradually and knead the dough until smooth. Cover with a cloth and let it rest for 30 minutes.
  3. In another bowl, combine the mashed chickpeas, sugar, ground almonds, and one of the beaten eggs. Mix until it forms a consistent filling.
  4. Roll out the dough on a floured surface to about 1/8 inch thick. Cut circles using a pastry cutter.
  5. Place a spoonful of filling in the center of each circle, fold over, and seal the edges with a fork.
  6. Heat the vegetable oil in a deep fryer or heavy-bottomed pan over medium heat. Fry the pastries until golden, about 3-4 minutes per side.
  7. Drain on paper towels and sprinkle with sugar and cinnamon mixture while warm.
