Ingredients
- chicken, cut into 8 pieces – 1 whole / 1.2 kg
- garlic cloves, minced – 4 cloves
- shallots, finely chopped – 3 large / 150 g
- turmeric powder – 1 tsp / 5 g
- coriander powder – 1 tsp / 5 g
- galangal, crushed – 2-inch piece / 20 g
- lemongrass, smashed – 1 stalk
- bay leaves – 2 leaves
- salt – 1 tsp / 5 g
- black pepper, ground – 1/2 tsp / 2.5 g
- coconut milk – 1 cup / 240 ml
- vegetable oil for frying – as needed
Instructions
- Prepare the spice paste by blending garlic, shallots, turmeric, coriander, and galangal.
- In a large bowl, mix the chicken pieces with the spice paste, lemongrass, bay leaves, salt, and black pepper. Let it marinate for at least 30 minutes.
- Heat the coconut milk in a large pot and add the marinated chicken. Cook over medium heat until the chicken is tender and the liquid is reduced, about 20 minutes.
- Remove the chicken from the pot and set aside to cool slightly.
- In a frying pan, heat the vegetable oil over medium-high heat. Fry the chicken pieces until golden brown and crispy.
- Serve hot with rice and sambal.
