Arroz de tamboril, also known as monkfish rice, is a traditional Portuguese dish that showcases the country’s love for seafood and rice in a harmoniously delicious stew. Ingredients

  • fresh monkfish – 1 lb / 450 g
  • olive oil – 2 tbsp / 30 ml
  • onion, finely chopped – 1 medium
  • garlic cloves, minced – 3 cloves
  • red bell pepper, chopped – 1 medium
  • tomatoes, chopped – 2 medium
  • tomato paste – 2 tbsp / 30 g
  • white rice – 1 cup / 185 g
  • fish stock – 4 cups / 960 ml
  • bay leaf – 1
  • fresh parsley, chopped – 1/4 cup / 15 g
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, sauté until the onion is translucent.
  2. Add the red bell pepper and chopped tomatoes. Cook for another 5 minutes until the vegetables soften.
  3. Stir in the tomato paste and cook for 2 minutes.
  4. Add the rice and stir to coat the grains with the vegetable mixture.
  5. Pour in the fish stock, add the bay leaf, and season with salt and pepper. Bring to a boil.
  6. Reduce heat to low, cover, and simmer for 15 minutes.
  7. Add the monkfish pieces, gently stirring them into the rice. Simmer for an additional 10-12 minutes until the rice is cooked and the fish is tender.
  8. Remove from heat, discard the bay leaf, and sprinkle with fresh parsley before serving.
