Ingredients

  • razor clams – 500 g / 1.1 lbs
  • olive oil – 2 tbsp / 30 ml
  • onion, finely chopped – 1 large / 150 g
  • garlic cloves, minced – 3 cloves / 15 g
  • bell pepper, diced – 1 medium / 120 g
  • ripe tomatoes, chopped – 2 medium / 300 g
  • Arborio rice – 300 g / 1.5 cups
  • white wine – 120 ml / ½ cup
  • fish stock – 1 liter / 4 cups
  • fresh parsley, chopped – ¼ cup / 15 g
  • lemon wedges – for serving
  • salt and pepper – to taste

Instructions

  1. Rinse the razor clams thoroughly under cold water. Set aside.
  2. Heat olive oil in a large pot. Sauté the onion, garlic, and bell pepper until soft and fragrant, about 5 minutes.
  3. Add chopped tomatoes and cook until softened. Stir in the Arborio rice and cook for 2 minutes.
  4. Pour in the white wine and allow it to evaporate. Add the fish stock gradually, stirring frequently.
  5. After about 10 minutes, add the razor clams, mixing them carefully into the rice. Cook for another 10-15 minutes until the rice is creamy and the clams are cooked.
  6. Season with salt and pepper. Stir in the fresh parsley before serving with lemon wedges on the side.
