Ingredients

  • chicken thighs – 1 lb / 450 g
  • uncooked white rice – 1 cup / 200 g
  • carrots – 2 medium, diced
  • green bell pepper – 1 large, diced
  • onion – 1 large, diced
  • garlic – 3 cloves, minced
  • cilantro – 1/2 cup / 30 g, chopped
  • chicken broth – 6 cups / 1.4 liters
  • olive oil – 2 tbsp
  • salt – to taste
  • black pepper – to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add chicken thighs and brown them on both sides. Remove and set aside.
  3. In the same pot, add onion, garlic, carrots, and bell pepper. Sauté until the vegetables soften.
  4. Return the chicken to the pot. Add the rice and stir to combine with vegetables.
  5. Pour chicken broth into the pot, and add salt and pepper.
  6. Bring to a boil, then reduce heat to low and let simmer for 20-25 minutes.
  7. Stir in cilantro, adjusting seasoning as necessary before serving. Serve hot.
