Ingredients
- chicken thighs – 1 lb / 450 g
- uncooked white rice – 1 cup / 200 g
- carrots – 2 medium, diced
- green bell pepper – 1 large, diced
- onion – 1 large, diced
- garlic – 3 cloves, minced
- cilantro – 1/2 cup / 30 g, chopped
- chicken broth – 6 cups / 1.4 liters
- olive oil – 2 tbsp
- salt – to taste
- black pepper – to taste
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add chicken thighs and brown them on both sides. Remove and set aside.
- In the same pot, add onion, garlic, carrots, and bell pepper. Sauté until the vegetables soften.
- Return the chicken to the pot. Add the rice and stir to combine with vegetables.
- Pour chicken broth into the pot, and add salt and pepper.
- Bring to a boil, then reduce heat to low and let simmer for 20-25 minutes.
- Stir in cilantro, adjusting seasoning as necessary before serving. Serve hot.
