Ingredients

  • Basmati rice – 3 cups / 600 g
  • Chicken breast – 500 g / 1.1 lbs, cut into cubes
  • Plain yogurt – 1 1/2 cups / 360 g
  • Egg yolks – 2 large
  • Saffron – 1 tsp / 0.5 g, ground and steeped in 2 tbsp hot water
  • Barberries – 1/2 cup / 80 g
  • Sugar – 1 tsp
  • Butter – 100 g / 7 tbsp
  • Vegetable oil – 3/4 cup / 180 ml
  • Salt – 1 tbsp
  • Ground black pepper – 1 tsp

Instructions

  1. Rinse the rice under cold water until the water runs clear. Soak for 30 minutes.
  2. In a large pot, bring 8 cups of water to a boil, add salt, then add rice. Cook until the rice is al dente, about 6-7 minutes, then drain.
  3. In a medium bowl, combine yogurt, egg yolks, and half of the saffron water. Mix well.
  4. Add the chicken cubes to the yogurt mixture, season with salt and pepper, and marinate for 30 minutes.
  5. Preheat your oven to 180°C (350°F).
  6. In a pan, melt 2 tbsp butter and lightly sauté the barberries with sugar. Remove and set aside.
  7. In a large, ovenproof dish, spread half of the rice, then layer the chicken mixture over it. Top with the remaining rice, and press down firmly.
  8. Pour the remaining saffron water over the top. Drizzle with vegetable oil.
  9. Cover with foil and bake for 60-70 minutes, until the edges are golden brown.
  10. Let cool for 10 minutes, then invert onto a serving plate. Garnish with barberries and additional saffron if desired.

Possible Substitutions

For those who like to customize their meals or need alternatives:
  • Swap chicken breast for lamb cubes for a richer flavor.
  • Use olive oil instead of vegetable oil for a Mediterranean twist.
  • If barberries are hard to find, dried cranberries make a perfect substitute.
