Ingredients

  • beef chuck – 2 pounds / 900 g
  • large onions – 3 large / about 500 g
  • butter – 2 tablespoons / 30 g
  • all-purpose flour – 2 tablespoons / 16 g
  • beef stock – 3 cups / 720 ml
  • bay leaves – 2
  • cloves – 4 cloves
  • vinegar – 3 tablespoons / 45 ml
  • brown sugar – 2 tablespoons / 30 g
  • black pepper – 1 teaspoon / 5 g
  • salt – to taste

Instructions

  1. Cut the beef chuck into 1-inch cubes. Season with salt and black pepper.
  2. Melt the butter in a large pot over medium heat. Add onions, sauté until caramelized, about 10 minutes.
  3. Add beef cubes, brown them on all sides. Sprinkle flour over beef and onions, stir to coat evenly.
  4. Slowly add beef stock, stirring continuously to avoid lumps.
  5. Add bay leaves, cloves, vinegar, and brown sugar. Stir well.
  6. Bring to a simmer, cover, and reduce heat to low. Cook slowly for 2-3 hours until beef is tender.
  7. Remove bay leaves and cloves before serving.
