Ingredients

  • Jasmine rice – 2 cups / 400 g
  • Fresh corn kernels – 1 cup / 175 g
  • Coconut milk – 1 cup / 240 ml
  • Water – 2 cups / 480 ml
  • Salt – 1 tsp / 5 g
  • Pandan leaves – 2 leaves
  • Shallots – 2, thinly sliced
  • Vegetable oil – 2 tbsp / 30 ml

Instructions

  1. Rinse the jasmine rice under running water until the water runs clear. Drain well.
  2. In a large saucepan, heat the vegetable oil over medium heat and sauté the shallots until golden brown.
  3. Add the rinsed rice to the pan, stirring to coat the grains with the oil and shallot mixture.
  4. Stir in the fresh corn kernels, coconut milk, water, salt, and pandan leaves.
  5. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes until the rice is tender and the liquid has been absorbed.
  6. Once cooked, remove from the heat and let the rice sit, covered, for another 10 minutes to finish steaming.
  7. Fluff the rice with a fork before serving. Remove the pandan leaves prior to serving.
