Sate Ponorogo is a specialty of Ponorogo, a regency in East Java, Indonesia. This dish features skewered and grilled marinated chicken, known for its succulent texture and rich, smoky flavor enhanced by a sweet and savory peanut sauce. Unlike other Indonesian sate, which often uses turmeric, Sate Ponorogo is distinguished by its use of a unique marinade and its traditional cooking method over an open flame on coconut husk charcoal, lending a distinct aroma and taste.
Ingredients
- chicken thighs, boneless and skinless – 500 g
- peanut butter – 1/2 cup / 120 g
- sweet soy sauce (kecap manis) – 1/4 cup / 60 ml
- garlic, minced – 4 cloves
- shallots, minced – 4
- fresh galangal, minced – 1 tablespoon / 6 g
- coconut milk – 1/2 cup / 120 ml
- lime juice – 2 tablespoons / 30 ml
- brown sugar – 2 tablespoons / 28 g
- chili paste – 1 tablespoon / 15 g
- salt – 1 teaspoon / 5 g
Instructions
- Cut the chicken thighs into bite-sized pieces.
- In a large bowl, mix peanut butter, sweet soy sauce, garlic, shallots, galangal, coconut milk, lime juice, brown sugar, chili paste, and salt until well combined.
- Add chicken pieces to the marinade, ensuring they are thoroughly coated. Cover and refrigerate for at least 3 hours, or overnight for best results.
- Soak wooden skewers in water for 30 minutes to prevent burning.
- Thread the marinated chicken pieces onto the skewers.
- Preheat a grill to medium-high heat. Grill the chicken skewers for 5-7 minutes per side, or until the chicken is cooked through and slightly charred.
- Serve the skewers hot with extra sweet soy sauce and a side of rice or lontong (rice cakes).
