Ingredients

  • sweet corn kernels – 2 cups / 340 g
  • mung beans – 1 cup / 200 g
  • pumpkin, diced – 2 cups / 300 g
  • coconut milk – 1 can / 400 ml
  • water – 3 cups / 720 ml
  • onion, chopped – 1 medium / 150 g
  • garlic, minced – 3 cloves
  • vegetable oil – 2 tbsp / 30 ml
  • salt – 1 tsp / 5 g
  • black pepper – 1/2 tsp / 2 g

Instructions

  1. Rinse mung beans thoroughly and soak in water for at least 30 minutes.
  2. In a large pot, heat the vegetable oil over medium heat. Add chopped onion and minced garlic, sautéing until fragrant and translucent.
  3. Drain mung beans and add them to the pot with 3 cups of water. Bring to a boil, then reduce heat and simmer for about 20 minutes.
  4. Add the diced pumpkin, sweet corn kernels, and coconut milk to the pot. Stir well to combine.
  5. Season with salt and black pepper. Continue to simmer until the pumpkin is tender and the stew has thickened, about 15-20 minutes.
  6. Adjust seasoning if necessary and serve hot.
