  • large onion, chopped – 1 / 150 g
  • carrots, diced – 2 / 120 g
  • celery stalks, diced – 2 / 100 g
  • garlic cloves, minced – 3 / 15 g
  • potatoes, diced – 2 / 250 g
  • cabbage, shredded – 1/2 head / 300 g
  • stale bread slices – 4 / 200 g
  • chicken or vegetable broth – 4 cups / 960 ml
  • salt – to taste
  • black pepper – to taste
  • fresh thyme – 2 sprigs
  • Parmesan cheese, grated – 1/2 cup / 50 g

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion, carrots, and celery; sauté until they begin to soften, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the diced potatoes and shredded cabbage; cook for 3 minutes, stirring occasionally.
  5. Pour in the broth and bring the mixture to a boil. Reduce the heat to a simmer, season with salt and black pepper, and add the thyme sprigs.
  6. Simmer the soup for about 20-25 minutes until the vegetables are tender.
  7. Place a slice of stale bread at the bottom of each serving bowl.
  8. Ladle the hot soup over the bread, allowing it to soak up some of the liquid.
  9. Sprinkle grated Parmesan cheese generously over the top before serving.
