Zupa Szczawiowa is a traditional Polish sorrel soup, celebrated for its tangy and refreshing taste. Rooted deeply in Polish culinary heritage, this soup is often enjoyed in the spring, when sorrel is abundant. The vibrant green leaves of sorrel impart a distinctive lemony flavor, balanced by the richness of simmered vegetables and a touch of creamy texture. It’s a soup that embodies the fresh and hearty aspects of Polish cuisine.

Ingredients

  • fresh sorrel leaves – 2 cups / 100 g
  • butter – 2 tablespoons / 28 g
  • onion, chopped – 1 medium / 150 g
  • potatoes, diced – 2 medium / 300 g
  • carrot, diced – 1 medium / 90 g
  • vegetable broth – 4 cups / 960 ml
  • salt – 1 teaspoon / 5 g
  • black pepper – 1/2 teaspoon / 2.5 g
  • heavy cream – 1/2 cup / 120 ml
  • hard-boiled eggs, sliced – 2
  • fresh dill, chopped – 2 tablespoons / 8 g

Instructions

  1. 1. Wash the sorrel leaves and remove any tough stems. Chop the leaves coarsely.
  2. 2. In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent.
  3. 3. Add the diced potatoes and carrot to the pot and sauté for 3-4 minutes.
  4. 4. Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer until the vegetables are tender, about 20 minutes.
  5. 5. Stir in the sorrel leaves, salt, and black pepper. Simmer for an additional 5 minutes.
  6. 6. Remove from heat and use an immersion blender to puree the soup to the desired consistency.
  7. 7. Stir in the heavy cream and adjust seasoning if necessary.
  8. 8. Serve hot, garnished with sliced hard-boiled eggs and fresh dill.
