Ingredients
- ripe tomatoes – 1.5 kg / 3.3 lbs
- olive oil – 2 tbsp
- onion – 1 medium, chopped
- garlic cloves – 3, minced
- vegetable broth – 1.5 liters / 6 cups
- carrot – 1 large, diced
- celery stalks – 2, chopped
- sugar – 1 tsp
- salt – to taste
- black pepper – to taste
- fresh basil leaves – a handful, chopped
- sour cream – 1 cup / 240 ml
- parsley – for garnish, chopped
- rice or pasta – 1 cup, cooked
Instructions
- Preheat oven to 200°C (390°F). Halve the tomatoes and place them on a baking tray. Drizzle with olive oil and roast for 25 minutes until soft.
- In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
- Add the roasted tomatoes, including any juices from the tray, to the pot. Stir in the vegetable broth, carrot, and celery.
- Season with sugar, salt, and black pepper. Simmer for 30 minutes until vegetables are tender.
- Use an immersion blender to puree the soup until smooth.
- Stir in the chopped basil and let simmer for another 5 minutes.
- Remove from heat and mix in sour cream until it’s well combined.
- Serve hot, garnished with parsley, and accompanied by a side of cooked rice or pasta.
