Ingredients

  • olive oil – 3 tbsp
  • onion – 1 large, chopped
  • garlic – 3 cloves, minced
  • zucchini – 4 medium-sized, sliced
  • tomato – 2 large, chopped
  • tomato paste – 2 tbsp
  • water – 2 cups / 480 ml
  • ground cumin – 1 tsp
  • ground coriander – 1 tsp
  • salt – 1 tsp
  • black pepper – 1/2 tsp
  • fresh parsley – 1/4 cup / 15 g, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and cook until translucent.
  2. Stir in garlic and sauté for another minute until fragrant.
  3. Add zucchini slices and cook for about 5 minutes until they just begin to soften.
  4. Mix in chopped tomatoes and tomato paste, cooking for additional 3 minutes.
  5. Pour in water, then add cumin, coriander, salt, and black pepper. Stir well.
  6. Bring the mixture to a simmer, reduce the heat to low, cover, and let it cook for about 25-30 minutes until the zucchini is tender.
  7. Garnish with fresh parsley before serving.
