Zhingyalov khats is a traditional Armenian flatbread known for its rich history and vibrant flavors. Originating from the Artsakh region, this beloved dish is a staple among Armenian cuisines, especially during the spring when fresh greens are abundant. The bread is filled with an array of finely chopped herbs and greens, which gives it its signature taste and colorful appearance. Each family often has its own selection of greens used in the filling, making it a deeply personal dish that reflects the local flora and the household’s culinary legacy.
Ingredients
- all-purpose flour – 2 cups / 240 g
- water – 1 cup / 240 ml
- salt – 1 tsp / 6 g
- olive oil – 2 tbsp / 30 ml
- assorted greens (spinach, parsley, cilantro, scallions, chard, dill) – 4 cups / 240 g, finely chopped
- black pepper – 1 tsp / 5 g
Instructions
- In a large bowl, combine flour and salt. Gradually add water and olive oil, mixing until a smooth dough forms. Knead for about 5-7 minutes until elastic.
- Cover the dough with a cloth and let it rest for 30 minutes.
- Meanwhile, finely chop all the greens and combine them with black pepper in a separate bowl.
- Divide the rested dough into 4 equal pieces and roll each piece into a thin circle about 10 inches in diameter.
- Spread a quarter of the herbed mixture evenly over each circle of dough, leaving a bit of space around the edges.
- Fold the edges over the filling and gently press down to seal.
- Heat a skillet over medium heat. Cook each flatbread on the skillet for about 3-4 minutes on each side, or until golden brown and cooked through.
- Serve warm or at room temperature.
