Ingredients

  • Smoked ham hock – 1 piece / 500 g
  • Pancetta – 150 g / 5 oz
  • Savoy cabbage – 1 small head, roughly chopped
  • Potatoes – 4 medium, peeled and diced
  • Carrots – 2 large, sliced
  • Leeks – 1 large, sliced
  • Garlic – 3 cloves, minced
  • Bay leaves – 2 leaves
  • Black peppercorns – 1 tsp
  • Water – 1.5 liters / 6 cups
  • Olive oil – 2 tbsp
  • Salt – to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  2. Add smoked ham hock, pancetta, bay leaves, and peppercorns to the pot. Pour in water and bring to a boil.
  3. Reduce heat to simmer, cover, and cook for 1 hour until meat is tender.
  4. Add potatoes, carrots, and leeks to the pot. Continue to simmer for 15 minutes.
  5. Stir in the chopped savoy cabbage and cook for another 10-15 minutes until all vegetables are tender.
  6. Season with salt to taste. Remove bay leaves and serve hot.
