Yúxiāng, which translates to ‘fish fragrance’, is a classic Chinese sauce known for its delightful balance of sweet, sour, spicy, and savory notes that tantalize the palate. Originating from Sichuan cuisine, despite its name, the sauce contains no fish, but was traditionally used to enhance the flavor of fish dishes. It has evolved into a versatile accompaniment for a variety of proteins and vegetables, delivering a harmony of garlic, ginger, and the subtle heat of Sichuan peppercorns paired beautifully with black vinegar and soy.

Ingredients

  • minced garlic – 2 tablespoons / 30 g
  • minced ginger – 1 tablespoon / 15 g
  • Sichuan peppercorns – 1 teaspoon / 2 g
  • doubanjiang (spicy fermented bean paste) – 2 tablespoons / 30 g
  • chicken broth – 1 cup / 240 ml
  • soy sauce – 2 tablespoons / 30 ml
  • black vinegar – 1 tablespoon / 15 ml
  • sugar – 1 tablespoon / 15 g
  • cornstarch – 1 tablespoon / 8 g
  • water – 2 tablespoons / 30 ml
  • vegetable oil – 2 tablespoons / 30 ml

Instructions

  1. In a small bowl, mix cornstarch and water to form a slurry. Set aside.
  2. Heat oil in a pan over medium heat. Add Sichuan peppercorns and sauté until fragrant.
  3. Stir in garlic and ginger, sautéing until golden.
  4. Add doubanjiang, blend thoroughly with aromatic mixture.
  5. Pour in chicken broth, soy sauce, black vinegar, and sugar. Stir well.
  6. Bring to a simmer, then stir in the cornstarch slurry to thicken.
  7. Simmer for another 2-3 minutes, allowing flavors to meld.
  8. Adjust seasoning to taste before serving.
