Yakitori – Classic
This is the traditional, time-tested version of the dish. It stays true to its origins, using well-established techniques and ingredients that define its authentic flavor. A perfect starting point for exploring its evolution.
Yakitori, a beloved Japanese street food, is a delightful dish of skewered and grilled chicken. Originating from Japan, it captures the essence of simple yet exquisite culinary artistry. Traditionally enjoyed in izakayas, these tantalizing skewers are seasoned with either salt (shio) or a savory-sweet sauce (tare) that has been perfected over generations. The charcoal grilling technique imparts a smoky depth, elevating the flavor to a sophisticated level.

Ingredients

  • boneless chicken thighs – 500 g / 1.1 lbs
  • soy sauce – 1/2 cup / 120 ml
  • mirin – 1/4 cup / 60 ml
  • sake – 1/4 cup / 60 ml
  • sugar – 2 tbsp / 25 g
  • green onions (scallions) – 4 stalks
  • bamboo skewers – 8 pieces
  • salt – to taste

Instructions

  1. Soak bamboo skewers in water for at least 30 minutes, to prevent burning.
  2. Cut chicken thighs into bite-sized pieces.
  3. In a saucepan, combine soy sauce, mirin, sake, and sugar. Simmer over medium heat until slightly thickened, about 10 minutes, to make the tare sauce.
  4. Trim and cut green onions into 2-inch pieces.
  5. Thread chicken pieces and green onion onto soaked skewers alternately.
  6. Preheat a grill or grill pan over medium-high heat.
  7. Grill skewers for about 8-10 minutes, turning occasionally, and brush with tare sauce frequently.
  8. Sprinkle with salt before serving.

Substitutions

  • mirin -> honey diluted with a splash of water
  • sake -> rice vinegar

Enhancements in the Next Evolution

  • Marinate the chicken in half of the tare sauce for 30 minutes before grilling for enhanced flavor.
  • Add a touch of freshly grated ginger to the tare sauce for a mild spicy kick.
  • Incorporate a charcoal grill for authentic flavor if possible.
