Originating from the Fukuoka region of Japan, this dish brings a unique twist to the beloved Japanese curry rice, where the curry is topped with cheese and baked to create a deliciously golden crust. Ingredients

  • vegetable oil – 2 tablespoons
  • onion, diced – 1 large / 150 g
  • carrot, sliced – 1 medium / 100 g
  • potato, cubed – 2 medium / 300 g
  • chicken breast, cut into cubes – 500 g / 1.1 lb
  • curry roux – 4 blocks / 120 g
  • water – 3 cups / 720 ml
  • cooked rice – 4 cups / 800 g
  • shredded cheese (cheddar or mozzarella) – 2 cups / 200 g
  • soy sauce – 1 tablespoon
  • green peas (optional) – 1/2 cup / 70 g

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Heat vegetable oil in a large pan over medium heat. Add the diced onion and sauté until translucent.
  3. Add the sliced carrot and cubed potatoes to the pan, cooking for an additional 5 minutes, stirring occasionally.
  4. Introduce the cubed chicken to the pan and cook until the chicken is no longer pink on the outside.
  5. Stir in the curry roux blocks and water. Bring the mixture to a gentle simmer, stirring until the roux is completely dissolved.
  6. Let the curry simmer for 10-15 minutes, until the vegetables are tender.
  7. In a large ovenproof dish, evenly spread the cooked rice. Pour the curry over the top.
  8. Sprinkle shredded cheese generously over the curry.
  9. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and golden brown.
  10. Garnish with green peas if desired and serve hot.
