XO Sauce is a luxurious condiment that hails from Hong Kong, China. Its origins can be traced back to the 1980s, where it was crafted in the kitchens of upscale restaurants to elevate dishes with its savory, umami-rich flavor profile. Named after ‘XO’, a term signifying ‘extra-old’ cognac, the sauce encompasses the same idea of luxury and indulgence. This sauce combines dried seafood and meats with chili, garlic, and onions, creating a complex, flavor-packed paste used to enhance a variety of dishes.

Ingredients

  • dried scallops – 1/2 cup / 50 g
  • dried shrimp – 1/2 cup / 50 g
  • Jinhua ham (or prosciutto) – 1/4 cup / 50 g
  • red chilies – 2, deseeded and chopped
  • shallots – 4, finely chopped
  • garlic – 6 cloves, minced
  • fish sauce – 2 tablespoons / 30 ml
  • soy sauce – 2 tablespoons / 30 ml
  • oyster sauce – 1 tablespoon / 15 ml
  • sugar – 1 tablespoon / 15 g
  • vegetable oil – 1/2 cup / 120 ml

Instructions

  1. Soak the dried scallops and shrimp in hot water for 30 minutes, then drain and finely chop.
  2. In a pan over medium heat, add vegetable oil and fry the shallots, garlic, and chilies until fragrant.
  3. Add the chopped scallops and shrimp, frying for another 5 minutes.
  4. Stir in the Jinhua ham, cooking until everything is well mingled.
  5. Add fish sauce, soy sauce, oyster sauce, and sugar, simmering until the sauce thickens to a paste-like consistency.
  6. Allow to cool slightly before storing in a sterilized jar.
