Originating from the dairy heartland of the United States, this soup showcases the state’s renowned cheese-making traditions and its love for beer, a staple in many local gatherings. This comforting dish combines the creamy texture of cheese with the robust flavors of beer, creating a symphony of tastes that’s both luxurious and comforting.

Ingredients

  • unsalted butter – 4 tablespoons / 56 g
  • yellow onion, diced – 1 medium / 150 g
  • carrot, diced – 1 medium / 120 g
  • celery stalk, diced – 1 stalk / 100 g
  • garlic cloves, minced – 3 cloves / 15 g
  • all-purpose flour – 1/4 cup / 30 g
  • chicken broth – 2 cups / 480 ml
  • beer (preferably lager) – 1 cup / 240 ml
  • heavy cream – 1 cup / 240 ml
  • sharp cheddar cheese, shredded – 8 ounces / 227 g
  • Dijon mustard – 1 tablespoon / 15 g
  • Worcestershire sauce – 1 teaspoon / 5 ml
  • salt – to taste
  • ground black pepper – to taste
  • chives, chopped (for garnish) – 2 tablespoons / 6 g

Instructions

  1. Melt the butter in a large pot over medium heat. Add onions, carrots, and celery. Sauté until soft, about 5 minutes.
  2. Stir in the garlic and cook until fragrant, about 1 minute.
  3. Sprinkle the flour over the vegetables and stir to coat. Cook for 2 minutes to remove the raw flour taste.
  4. Gradually whisk in the chicken broth and beer, bringing the mixture to a simmer.
  5. Add the heavy cream, allowing the soup to thicken slightly. Cook for another 5 minutes.
  6. Reduce heat to low and gradually stir in the shredded cheddar cheese, making sure it melts completely.
  7. Stir in Dijon mustard and Worcestershire sauce. Season with salt and pepper to taste.
  8. Serve hot, garnished with chopped chives.

Substitutions

  • heavy cream -> half-and-half
  • chicken broth -> vegetable broth
  • beer -> non-alcoholic beer
