Ingredients

  • wild boar shoulder – 2 lbs / 900 g
  • red Burgundy wine – 2 cups / 480 ml
  • onion – 1 large, chopped
  • carrot – 2 medium, sliced
  • celery stalk – 2, sliced
  • garlic – 4 cloves, minced
  • beef broth – 1 cup / 240 ml
  • juniper berries – 5, crushed
  • bay leaves – 2
  • fresh thyme – 2 sprigs
  • salt – to taste
  • black pepper – to taste
  • olive oil – 2 tbsp / 30 ml

Instructions

  1. Season the wild boar with salt and pepper.
  2. In a large Dutch oven, heat olive oil over medium-high heat. Brown the boar on all sides, then remove and set aside.
  3. In the same pot, add onions, carrots, celery, and garlic, sautéing until soft.
  4. Pour in the Burgundy wine, scraping up any browned bits from the pot bottom.
  5. Add beef broth, juniper berries, bay leaves, thyme, and the browned boar. Bring to a simmer.
  6. Cover and reduce heat to low. Simmer for about 2-3 hours or until the meat is tender.
  7. Remove bay leaves and thyme. Adjust seasoning and serve hot.
