- Carrot, finely chopped – 1 large / 100 g
- Celery stalk, finely chopped – 1 stalk / 70 g
- Ground veal – 250 g / 8.8 oz
- Ground pork – 250 g / 8.8 oz
- Dry white wine – 1 cup / 240 ml
- Milk – 1 cup / 240 ml
- Chicken broth – 1 cup / 240 ml
- Salt – to taste
- Black pepper – to taste
- Fresh rosemary – 1 tsp, finely chopped
- Fresh thyme – 1 tsp, finely chopped
Instructions
- In a large, heavy-bottomed saucepan, heat olive oil and butter over medium heat until the butter is melted.
- Add the chopped onion, carrot, and celery. Sauté until the vegetables are soft and fragrant, about 10 minutes.
- Increase the heat to medium-high and add the ground veal and pork, breaking it up with a wooden spoon. Cook until browned.
- Pour in the white wine and simmer until the liquid has mostly evaporated.
- Reduce the heat to medium-low, add the milk, and cook gently for about 10 minutes.
- Add the chicken broth, rosemary, and thyme; stir. Allow the ragù to simmer for 30-40 minutes, stirring occasionally.
- Season with salt and black pepper to taste before serving.
