Ingredients

  • Olive oil – 2 tbsp / 30 ml
  • Unsalted butter – 2 tbsp / 28 g
  • Onion, finely chopped – 1 large / 150 g
  • Carrot, finely chopped – 1 large / 100 g
  • Celery stalk, finely chopped – 1 stalk / 70 g
  • Ground veal – 250 g / 8.8 oz
  • Ground pork – 250 g / 8.8 oz
  • Dry white wine – 1 cup / 240 ml
  • Milk – 1 cup / 240 ml
  • Chicken broth – 1 cup / 240 ml
  • Salt – to taste
  • Black pepper – to taste
  • Fresh rosemary – 1 tsp, finely chopped
  • Fresh thyme – 1 tsp, finely chopped

Instructions

  1. In a large, heavy-bottomed saucepan, heat olive oil and butter over medium heat until the butter is melted.
  2. Add the chopped onion, carrot, and celery. Sauté until the vegetables are soft and fragrant, about 10 minutes.
  3. Increase the heat to medium-high and add the ground veal and pork, breaking it up with a wooden spoon. Cook until browned.
  4. Pour in the white wine and simmer until the liquid has mostly evaporated.
  5. Reduce the heat to medium-low, add the milk, and cook gently for about 10 minutes.
  6. Add the chicken broth, rosemary, and thyme; stir. Allow the ragù to simmer for 30-40 minutes, stirring occasionally.
  7. Season with salt and black pepper to taste before serving.
