Wat is a quintessential stew from Ethiopia, deeply ingrained in the culinary traditions of the region. Known for its rich, spicy, and robust flavors, this stew is traditionally prepared with a medley of spices and berbere, an Ethiopian staple seasoning. Among its variations, Doro Wat, made with chicken, is the most iconic, often enjoyed during special occasions and celebrations. Wat is typically served with injera, a sourdough flatbread that complements its complex flavors.

Ingredients

  • Chicken – 2 lbs / 900 g, bone-in, skin removed
  • Berbere spice mix – 3 tbsp / 25 g
  • Onions – 3 large, finely chopped
  • Garlic – 6 cloves, minced
  • Ginger – 2 inches / 5 cm, minced
  • Clarified butter (nit’r qibe) – 1/4 cup / 60 ml
  • Chicken broth – 2 cups / 480 ml
  • Salt – to taste
  • Black pepper – 1 tsp / 5 g
  • Boiled eggs – 4, peeled
  • Lemon juice – 1 tbsp / 15 ml

Instructions

  1. Heat the clarified butter in a large pot over medium heat.
  2. Add the onions and cook slowly until golden brown and caramelized.
  3. Stir in the garlic and ginger, cooking until fragrant.
  4. Add the berbere spice mix, stirring continuously until its oils are released.
  5. Season the chicken pieces with salt and pepper, then add to the pot, browning all sides.
  6. Pour in the chicken broth and add the lemon juice, bringing the stew to a simmer.
  7. Cook on low heat for about 45 minutes, or until the chicken is tender.
  8. Add the boiled eggs and simmer for an additional 10 minutes.
  9. Adjust seasoning with salt and lemon juice, if needed.
  10. Serve warm with injera.

  • Chicken -> Lamb, beef or a plant-based protein like chickpeas
  • Berbere spice mix -> A blend of cayenne pepper, paprika, fenugreek, ginger, and garlic powder
  • Clarified butter (nit’r qibe) -> Unsalted butter or ghee
