Bánh bèo is a traditional Vietnamese dish hailing from the central region, particularly Hue. This delightful dish features steamed rice cakes topped with savory ingredients. Often served in small round dishes, bánh bèo represents the delicate balance of flavors typical in Vietnamese cuisine. The soft, spongy texture of the rice cake provides a perfect canvas for the umami-rich toppings, often including minced shrimp, crispy shallots, and a drizzle of tangy fish sauce. Its origins lie in the bustling streets of Vietnam, where vendors and home cooks alike relish crafting this nuanced recipe that speaks to both heart and heritage.

Ingredients

  • rice flour – 1 cup / 160 g
  • tapioca starch – 2 tablespoons / 16 g
  • water – 1 3/4 cups / 420 ml
  • shrimp, peeled and deveined – 200 g
  • vegetable oil – 2 tablespoons / 30 ml
  • shallots, finely sliced – 3 medium / 60 g
  • fish sauce – 2 tablespoons / 30 ml
  • sugar – 1 teaspoon / 4 g
  • scallions, chopped – 2 tablespoons / 8 g
  • crushed peanuts – 2 tablespoons / 16 g
  • hot water – 1/4 cup / 60 ml

Instructions

  1. Prepare the rice cake batter by mixing rice flour, tapioca starch, and water until smooth. Let it rest for at least 30 minutes.
  2. Steam the batter: pour into small dishes or a muffin pan, about 1/4 full, and steam for 7-10 minutes or until set.
  3. Meanwhile, prepare the shrimp topping by cooking shrimp in a pan with a tablespoon of oil until pink and cooked through. Mince finely and set aside.
  4. Fry shallots in the remaining oil until crispy and golden. Drain on paper towels.
  5. Combine fish sauce, sugar, and hot water to make the dipping sauce.
  6. Assemble: top each rice cake with a teaspoon of shrimp, crispy shallots, chopped scallions, and crushed peanuts. Serve immediately with fish sauce.

Substitutions

  • shrimp -> pork mince or tofu

Enhancements in the Next Evolution
