Ingredients

  • Cabbage – 1 medium head / 800 g
  • Italian Sausage – 500 g
  • Onion – 1 large / 200 g
  • Garlic – 3 cloves
  • Carrot – 2 medium / 150 g
  • Celery – 2 stalks / 100 g
  • Chicken Broth – 4 cups / 960 ml
  • Tomato Paste – 2 tablespoons / 30 g
  • Olive Oil – 2 tablespoons / 28 ml
  • Salt – to taste
  • Black Pepper – to taste

Instructions

  1. Chop the cabbage into bite-sized pieces.
  2. Thinly slice the onion, mince the garlic, and dice the carrot and celery.
  3. Heat olive oil in a large pot over medium heat. Add the sausage, breaking it up with a spoon, and cook until browned.
  4. Remove the sausage and set aside. In the same pot, add onion and garlic. Sauté until the onion becomes translucent.
  5. Stir in carrot and celery. Cook for about 5 minutes.
  6. Add cabbage, chicken broth, and tomato paste to the pot. Bring to a simmer.
  7. Return the sausage to the pot. Season with salt and black pepper. Cover and let it simmer gently for 45-60 minutes.
  8. Adjust seasoning and serve hot.
