Varză a la Cluj, a classic Romanian casserole, hails from the historical region of Transylvania. This hearty dish is reminiscent of the beloved stuffed cabbage rolls, or ‘sarmale’, yet presented in a more rustic, deconstructed form. Layers of seasoned minced meat, aromatic rice, and tender cabbage come together to create a comforting and satisfying meal. Often enjoyed during the colder months, it embodies the rich flavors and traditional cooking methods deeply rooted in Romanian cuisine.

Ingredients

  • green cabbage – 1 large head / about 1 kg
  • ground pork – 500 g / 1.1 lbs
  • ground beef – 500 g / 1.1 lbs
  • long-grain rice – 150 g / 3/4 cup
  • onion – 1 large / 150 g, finely chopped
  • vegetable oil – 2 tbsp
  • tomato paste – 2 tbsp
  • paprika – 1 tsp
  • dried thyme – 1 tsp
  • black pepper – 1/2 tsp
  • salt – 1 1/2 tsp
  • sour cream – 200 g / 3/4 cup

Instructions

  1. Preheat the oven to 180°C / 350°F.
  2. Core the cabbage and boil in lightly salted water for 10 minutes until slightly softened. Remove, drain, and set aside.
  3. In a large pan, heat vegetable oil over medium heat, add chopped onion, and sauté until translucent.
  4. Add ground pork and beef, cook until browned, breaking it up with a spoon.
  5. Stir in tomato paste, paprika, dried thyme, salt, and pepper. Cook for another 5 minutes.
  6. Rinse the rice under cold water and add it to the meat mixture. Cook for 5 minutes.
  7. In a casserole dish, layer half of the cabbage leaves to cover the bottom.
  8. Spread the meat and rice mixture over the cabbage leaves.
  9. Top with remaining cabbage leaves.
  10. Cover with foil and bake for 45 minutes. Remove foil, spread sour cream over the top, and bake for an additional 15 minutes.
