Varaždinski klipič, a delightful and beloved pastry hailing from the picturesque region of Varaždin in northern Croatia, is known for its unique shape and soft, airy texture. Traditionally, this pastry would be lovingly crafted by the local women, using simple ingredients that bring out a rich, buttery flavor. With its golden brown crust and delicate, fluffy center, Varaždinski klipič is often shared at family gatherings and festive celebrations, both as a snack and a cherished cultural delicacy.

Ingredients

  • all-purpose flour – 4 cups / 500 g
  • milk – 1 cup / 240 ml
  • fresh yeast – 25 g
  • sugar – 2 tsp
  • salt – 1 tsp
  • butter – 1/2 cup / 113 g, melted
  • egg – 1, beaten
  • sesame seeds – optional, for topping

Instructions

  1. Warm the milk slightly and dissolve the yeast and sugar in it. Let it sit for 5-10 minutes until frothy.
  2. In a large bowl, mix the flour and salt. Add the yeast mixture and melted butter, and mix to form a dough.
  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place until doubled in size, about 1 hour.
  5. Preheat the oven to 200°C (390°F).
  6. Punch down the dough and divide it into 12 equal pieces. Roll each piece into a thin, elongated strip.
  7. Twist each strip into the traditional twisted shape, place on a baking sheet lined with parchment paper, and let rise for another 20 minutes.
  8. Brush with beaten egg and sprinkle with sesame seeds, if using.
  9. Bake for about 15-20 minutes until golden brown.
