Ingredients

  • sourdough starter – 1 cup / 240 ml
  • water – 4 cups / 960 ml
  • smoked sausage – 14 oz / 400 g
  • potatoes – 4 medium, diced
  • carrot – 1 large, diced
  • parsnip – 1, diced
  • onion – 1 large, chopped
  • garlic cloves – 3, minced
  • allspice berries – 5
  • bay leaf – 1
  • marjoram – 1 tsp / 2 g
  • salt – to taste
  • black pepper – to taste
  • sour cream – 1/2 cup / 120 ml
  • hard-boiled eggs – 2, halved
  • bread – optional, for serving

Instructions

  1. In a large pot, combine the sourdough starter and water. Bring to a gentle boil.
  2. Add smoked sausage and cook for about 15 minutes to infuse flavor.
  3. Add potatoes, carrot, parsnip, onion, and garlic to the pot.
  4. Throw in allspice berries, bay leaf, and marjoram. Season with salt and pepper.
  5. Lower the heat and let the soup simmer for approximately 25-30 minutes, until vegetables are tender.
  6. Stir in the sour cream and adjust seasoning as needed.
  7. Serve hot, garnished with halved hard-boiled eggs, alongside bread if desired.
