Uramaki – Classic
This is the traditional, time-tested version of the dish. It stays true to its origins, using well-established techniques and ingredients that define its authentic flavor. A perfect starting point for exploring its evolution.
Uramaki, more commonly known as the ‘inside-out roll’, is an innovative style of sushi that defies traditional boundaries. Originating in the United States, this dish became a hallmark of American sushi culture in the 1960s, diverging from conventional Japanese techniques. Traditionally, sushi rolls have the nori on the outside; however, with uramaki, the rice envelops the nori and fillings, showcasing the grain’s texture and offering a unique twist to sushi-lovers. The California Roll is one of the most recognized forms of uramaki, embodying the fusion of cultures by combining ingredients like avocado and imitation crabmeat, which were more palatable to Western tastes.
Ingredients
- sushi rice – 2 cups / 440 g
- water – 2 1/2 cups / 600 ml
- rice vinegar – 1/4 cup / 60 ml
- sugar – 2 tbsp / 25 g
- salt – 1 tbsp / 15 g
- nori sheets – 4 sheets
- imitation crab stick – 12 sticks
- ripe avocado, sliced – 1 large
- cucumber, julienned – 1 medium
- toasted sesame seeds – 1/4 cup / 30 g
Instructions
- Rinse the sushi rice thoroughly under cold water until the water runs clear.
- Combine the rinsed rice and water in a rice cooker or saucepan. Cook according to the rice cooker’s instructions or bring to a boil, cover, and simmer for 15 minutes.
- Mix the rice vinegar, sugar, and salt in a small saucepan. Heat until sugar dissolves. Allow to cool slightly.
- Spread the hot rice into a large wooden or non-metallic bowl. Gradually fold in the vinegar mixture while fanning and sliding the rice with a cutting motion to cool and coat the grains.
- Place a sheet of plastic wrap on a bamboo sushi mat. Lay a nori sheet on top.
- With wet hands, spread a thin layer of rice over the nori, ensuring even coverage. Sprinkle toasted sesame seeds over the rice.
- Carefully flip the nori so the rice is facing down. Lay imitation crab sticks, avocado slices, and cucumber strips across the bottom edge of the nori.
- Using the mat, roll the sushi away from you, applying gentle pressure to form a cylinder. Remove the roll from the mat and slice into 8 pieces using a sharp, wet knife.
Substitutions
- imitation crab stick -> real crab meat or cooked shrimp
- ripe avocado -> ripe mango
- cucumber -> julienned carrots
Enhancements in the Next Evolution
- Add a spicy mayo sauce inside the roll for added flavor.
- Marinate the crab meat in a bit of soy sauce for depth.
- Incorporate a small amount of wasabi into the roll for heat.
