Ingredients

  • rye flour – 2 cups / 220 g
  • all-purpose flour – 1 cup / 130 g
  • water – 2 cups / 480 ml
  • dark syrup (e.g., molasses) – 1/4 cup / 60 ml
  • fresh yeast – 1 1/2 oz / 42 g
  • salt – 1 tsp
  • caraway seeds – 1 tbsp

Instructions

  1. In a large bowl, mix water and syrup until the syrup dissolves.
  2. Dissolve yeast in the syrup-water mixture.
  3. In another bowl, combine rye flour, all-purpose flour, salt, and caraway seeds.
  4. Gradually add the flour mixture to the liquid, stirring continuously to form a dough.
  5. Knead the dough until smooth, then place it in a greased birch wood container or baking tin.
  6. Cover with a cloth and let it rise for about 1.5 hours or until doubled in size.
  7. Preheat oven to 350°F (175°C).
  8. Bake for about 1.5 hours or until the bread sounds hollow when tapped.
  9. Remove from oven and allow to cool before slicing.
