  • Fresh basil leaves – 1 cup / 30 g
  • Pecorino Romano cheese, grated – 1 cup / 100 g
  • Salt – to taste
  • Black pepper – to taste

Instructions

  1. In a large pot of boiling salted water, cook the spaghetti until al dente. Drain and reserve 1 cup of pasta water.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the minced garlic and red chili flakes, sautéing until fragrant.
  3. Add the halved cherry tomatoes to the skillet, cooking them until soft, about 5 minutes.
  4. Add the cooked spaghetti to the skillet, tossing to combine with the tomatoes and flavored oil.
  5. Gradually add the reserved pasta water until the sauce reaches the desired consistency. Season with salt and black pepper.
  6. Stir in fresh basil leaves and remove from heat.
  7. Serve immediately, garnished with grated Pecorino Romano cheese.
