Tsigaridia is a traditional vegetarian dish from Greece, often prepared in the rural areas where seasonal greens are abundant. Ingredients

  • Mixed wild greens (such as dandelion, spinach, and chard) – 500 g / 1.1 lbs
  • Olive oil – 60 ml / 4 tbsp
  • Onion, finely chopped – 1 large / 150 g
  • Garlic cloves, minced – 3 cloves
  • Tomatoes, chopped – 2 medium / 200 g
  • Dill, chopped – 15 g / 1/2 cup
  • Salt – to taste
  • Black pepper – to taste
  • Lemon juice – 30 ml / 2 tbsp

Instructions

  1. Rinse the greens thoroughly and chop them roughly.
  2. Heat olive oil in a large pan over medium heat. Add onions and sauté until translucent.
  3. Stir in the garlic and sauté for another 1-2 minutes until fragrant.
  4. Add the tomatoes and cook until they start breaking down, about 5 minutes.
  5. Add the greens to the pan. Mix well to coat them in oil and tomato mixture.
  6. Season with salt and black pepper. Cover the pan and let it simmer on low for 15 minutes.
  7. Stir occasionally, ensuring the greens cook evenly.
  8. Remove from heat, stir in fresh dill and lemon juice before serving.

Substitutions

  • Mixed wild greens -> Only spinach or kale if wild greens are unavailable
  • Dill -> Parsley or mint as a different aromatic
  • Tomatoes -> Canned tomatoes during the off-season
