- Eggplant – 1 large / 250 g
- Zucchini – 2 medium / 350 g
- Green bell pepper – 1 large / 150 g
- Potatoes – 2 medium / 300 g
- Tomatoes – 3 large / 450 g
- Tomato paste – 2 tablespoons / 30 g
- Water – 1 cup / 240 ml
- Salt – 1 teaspoon / 5 g
- Black pepper – 1/2 teaspoon / 1 g
- Dried oregano – 1 teaspoon / 1 g
- Paprika – 1 teaspoon / 2 g
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onions and sauté until translucent, about 5 minutes.
- Stir in minced garlic cloves and cook for another minute.
- Add diced eggplant, zucchini, and green bell pepper, stirring occasionally, cooking for 5 minutes.
- Mix in peeled and diced potatoes and continue cooking until vegetables start to soften.
- Add chopped tomatoes and tomato paste, stir well to combine.
- Pour in water, then season with salt, black pepper, oregano, and paprika.
- Bring the stew to a simmer, cover, and let cook for 45 minutes, stirring occasionally, until all vegetables are tender.
- Adjust seasoning to taste and serve hot.
