Ingredients

  • cornmeal – 2 cups / 240 g
  • water – 1 1/4 cups / 300 ml
  • salt – 1 teaspoon / 5 g
  • olive oil – for frying
  • smoked chorizo – 1 cup / 150 g, sliced
  • pote asturiano or beef stew – 2 cups / 480 ml
  • Asturian cheese or Manchego – 100 g, crumbled
  • parsley – for garnish

Instructions

  1. In a bowl, mix the cornmeal, water, and salt until well combined. Let the mixture rest for 10 minutes to thicken.
  2. Heat olive oil in a large skillet over medium-high heat. Form the cornmeal mix into small pancake shapes and fry each for about 2-3 minutes on each side until golden and crispy.
  3. In another pan, cook the chorizo slices until they’re browned and slightly crisp.
  4. To serve, place a spoonful of pote asturiano or beef stew on each torte, add chorizo slices, sprinkle with cheese, and garnish with parsley.
