Ingredients

  • Corn tortillas – 8 pieces
  • Quesillo cheese – 200 g / 7 oz
  • Butter – 2 tbsp / 30 g
  • Salt – to taste
  • Chopped fresh cilantro – 2 tbsp / 8 g

Instructions

  1. Heat a skillet over medium heat and add 1 tablespoon of butter.
  2. Place a corn tortilla in the skillet and add 50 g of quesillo cheese on one half.
  3. Fold the tortilla over and cook for about 2 minutes, pressing gently, until the cheese begins to melt.
  4. Flip the tortilla and cook for an additional 2 minutes until golden brown.
  5. Repeat with the remaining tortillas and quesillo, adding more butter to the skillet as needed.
  6. Sprinkle each with a pinch of salt and chopped cilantro before serving.
